What is Pectin?
Pectin is a naturally occurring polysaccharide (primarily galacturonic acid polymer) found in the cell walls of fruits, especially citrus peel and apple pomace. Commercial pectin is extracted from these sources during fruit juice and apple cider processing. High-methoxyl (HM) pectin requires sugar for gelling; low-methoxyl (LM) pectin gels with calcium ions, enabling sugar-free applications.
